The Delilah outpost is set to debut in spring 2027, when the ambitious new resort officially opens, alongside a new French-American steakhouse by the world’s most Michelin-starred chef, Alain Ducasse.
“Every element of Wynn Al Marjan Island has been conceptualized by Wynn Design & Development to surprise guests and surpass their expectations, to create a singular resort they’ve simply never experienced before,” Wynn President and Chief Creative Officer Todd-Avery Lenahan said. “That extends of course to the restaurant spaces we are designing for the esteemed chefs who are joining us. Whether it’s the ultimate in opulence or refinement, or perhaps imbued with a splash of whimsy, our desire is to entertain the guest’s eye with unique, unforgettable details while they’re savoring an unforgettable meal.”
Perched on the first floor of Wynn Al Marjan Island and spanning more than 2,000 square meters, Delilah will channel the glamour of the 1950s supper club. Its DNA borrows from the glittering nights of El Morocco in New York, Maxim’s in Paris, and even the legendary Les Caves du Roy in Beirut. Designed by Wynn’s in-house team, the space is a cinematic mix of romance and spectacle. Guests can expect to sip cocktails beside a crackling fireplace, slide into velvet banquettes for dinner à deux, or toast with friends over tables set for ten, all against a backdrop of live music and nightly performances.
For those familiar with Delilah’s original outpost in Los Angeles, part of the magic lies in its discretion. A strict no-photo policy has turned it into a haven for Hollywood’s A-list, offering rare privacy in a city obsessed with visibility. That old-school sense of exclusivity—where what happens inside stays inside—is baked into the supper club DNA, harking back to a time when celebrities could dance, dine, and drink without the flash of paparazzi intruding. Bringing that ethos to the Middle East, Delilah on Al Marjan Island is poised to be the region’s most coveted sanctuary for those who want to see and be seen, but on their own terms.
The menu, too, plays with nostalgia and novelty. Signature indulgences like Beef Wellington and the famously decadent Chicken Tenders (a cult favorite in Las Vegas) share the stage with new creations that spotlight the region’s own ingredients. A carefully curated wine list and cocktail program round out the experience, offering everything from crisp pairings to movie-star martinis.
Delilah’s arrival in Ras Al Khaimah marks the latest collaboration between Wynn Resorts and Los Angeles’ h.wood Group, the hospitality brand known for turning dining into theater. “Delilah is a truly special concept that offers guests a one-of-a-kind experience and an unmatched standard of luxury dining—one we are confident Wynn will help us bring to life once again as it expands to Al Marjan Island,” said Brian Toll and John Terzian, Co-Founders of The h.wood Group.
As for the Ducasse-helmed steakhouse, it promises to be anything but ordinary. Taking up two floors and nearly 2,000 square meters at Wynn Al Marjan Island, the legendary chef—whose name is synonymous with Michelin stars—has crafted a concept that marries the timeless swagger of a steakhouse with the elegance and precision of contemporary French cuisine.
The setting, dreamed up by designer Lenahan, is as theatrical as the menu itself. Think Duck Foie Gras Brioche and airy Cheese Soufflé to start, followed by the pièce de résistance—an entire “Beef Club” menu, where diners can curate their steak experience down to the sauce and side. And because dinner here is meant to be an event, many plates will come alive tableside: steaks carved with ritual-like precision, desserts like Baked Alaska lit in a flambéed blaze of spectacle.
“I’m very proud and honored to contribute to the Wynn Al Marjan Island project, which is for sure one of the most visionary and ambitious projects in the region,” Ducasse said. “The culinary experience we’ll create will radically reinvent the steakhouse concept by boldly reinterpreting the American classics with a contemporary French flair.”
And it’s just the beginning. When Wynn Al Marjan Island opens, it will boast a staggering 22 restaurants and lounges. Delilah, along with the newly announced French-American steakhouse by Alain Ducasse, are merely the first two acts revealed, setting the tone for a culinary lineup that promises to be as ambitious as the resort itself.
